Vegetarian Sandwich Recipes

As a Vegetarian or Vegan, it can be very difficult looking for good Vegetarian Sandwich Recipes and Fillings. But remember you can always make a good thick salad sandwich adding or removing ingredients you dislike. You can always use the Veggie Burgers and Sausages you may buy from your local supermarket or grocery shop, that always makes a nice sandwich too.

Chutney/Pesto, Avocado and Sliced Cheese Sandwich

Ciabbatta works best but good thick multigrain is nice too.

Incredients:

  • Chargrilled peppers (1/2 a red and 1/2 a green pepper sliced in 1cm thick strips)
  • Sliced avocado
  • Green pesto/ chutney
  • Thinly sliced cheese (if desired)
  • Homemade green chutney:

  • Clove garlic
  • 2 handfuls coriander
  • Handful of mint
  • 1 green chilli (or 2 if you like it hot!)
  • 1 tspn Crushed peanuts
  • Juice of half a lemon
  • Teaspoon sugar
  •  Salt if desired
  • Blitz in a blender to a semi-smooth paste (like pesto).

    Freeze any extra in ice cube trays and transfer to Tupperware once frozen. Will keep for 2-3 months.

    Cucumber Sandwich Recipe

    A sandwich recipe found all over Great Britain dating back to the Victorian days. A Cucumber Sandwich is often served at English tea parties as a light snacks.

    Ingredients:
    2 Slices of White Bread
    Cucumber
    Mayonnaise or Butter

    Instructions:
    1) Lay one piece of bread on your chopping board and spread a thin layer of Mayo or Butter onto the bread using a table knife.
    2) Slice about 8 pieces of Cucumber an carefully place on you bread until its evenly covered the bread.
